Lime and Orange Vinaigrette
I propose you a vinaigrette or dressing that you can make in a moment, if you don’t have a lime you can replace it with lemon, but always keeping a citric touch in the sauce with another ingredient.
Besides having power, it allows you to absorb iron better, due to its high vitamin C content.
A good dressing for your starters when you invite family or friends.

- 40 ML OLIVE OIL
- 1 LIME JUICE
- 1 TBSP ORANGE JUICE
- 1 TBSP APPLE CIDER VINEGAR
- 1 TBSP APPLE CONCENTRATE
- 1 TBSP MUSTARD
- 1 GARLIC
- 1 GREEN CHILLI CHOPPED THINLY
- 1/2 PICKLED CUCUMBER CUT IN BRUNOISSE
- SALT, PEPPER
- Blend all the ingredients except for the green chilli and the cucumber. Add these two ingredients at the end and salt and pepper.
KITCHEN TIPS: If you don’t digest well raw garlic, you can add black garlic or cook a head of garlic in the oven at 180ºC for half an hour, lined with baking paper and coated with a spoonful of olive oil. When cooked, use one for this lime and orange vinaigrette, it will make you feel better!
