Vanilla and Tofu Brownie Cheesecake

Vanilla and Tofu Brownie Cheesecake

Ingredients

For the Brownie

  • 200 GR BLACK CHOCOLATE (with more than 85% cocoa)
  • 150 GR CHIA BUTTER
  • 100 GR SPELT FLOUR
  • A PINCH OF SALT
  • 200 GR RICE SYRUP
  • 2 EGGS OR TWO TBSP GROUND FLAXSEED SOAKED IN 6 TBSP OF WATER

For the Tofu Cheesecake

  • 300 GR SILKEN TOFU
  • A PINCH OF SALT
  • 50 GR RICE SYRUP
  • 1 TSP VANILLA
  • 1 EGG OR A TBSP FLAXSEED SOAKED IN 3 TBSP OF WATER

Instructions

  1. Preheat the oven to 180ºC.
  2. Melt the chocolate (cut into small pieces) and the chia butter in a bain-marie and mix well. Let it cool slightly and add the rice syrup and the two eggs or the ground flax seeds blended with the water.
  3. Sift the flour into a bowl, add the pinch of salt, and add the previous mixture little by little.
  4. With a kitchen robot or blender, mix the silken tofu with the pinch of salt, the 50 gr of rice molasses and the beaten egg (or the tablespoon of flaxseed flakes with the water). Crush everything until it has a homogeneous or silky consistency. Try before, and reserve for when you ride the brownie.
  5. Grease a baking sheet, add the brownie dough and cover with the cheesecake dough (it can also be made with several layers, and even mix some of them to get a marbled effect)
  6. Bake for 40-45 minutes.

KITCHEN TIPS: If you want to give it a different touch, you can substitute the silky tofu with “spreadable tofu cheese” that is sold in organic shops, with a neutral flavour (they also sell with herbs…) will give your brownie cheesecake much more power
