Creamy Chia Pudding with Prunes and Mint

This chia pudding with prunes is delicious and very healthy at the same time, it provides that omega 3 so necessary for the body, in addition to helping to avoid constipation.

The mucilage released by chia seeds, along with the fibre of prunes, create a gel in the intestine that helps regulate intestinal activity. It’s a fresh pudding that helps you to feel full and satisfied, it provides energy with slow absorption of glucose. Much more than breakfast!

Chia Pudding with Prunes and Mint

(overnight for soaking the prunes and the chia seeds)

Ingredients

  • 250 ML OAT MILK
  • 3OO GR SILKEN TOFU
  • 3 TBSP OF RICE SYRUP
  • 5 PRUNES
  • 1 PINCH OF SALT
  • 5 TBSP CHIA SEEDS
  • 1 TSP VANILLA EXTRACT
  • 1 BUNCH FRESH MINT
  • 1 DROP MINT ESSENTIAL OIL (OPTIONAL)

Instructions

  1. Soak the chia seeds and prunes overnight with half the amount of oat milk (125 ml).
  2. Steam the silken tofu: put a pot with water and wait for it to boil. Place the silken tofu onto a steamer and wait for it to cook for 10 minutes. Let it cool down and set aside.
  3. Blend all the ingredients together until you get a creamy and fresh consistency.

KITCHEN TIPS: The tofu gives to the pudding a thicker consistency, but if you want to make it runnier, just use only oat milk. If you don´t like prunes, it’s also delicious with dates. Also, you can add cinnamon, cardamom, tangerine zest …
